A Delicate Antique Porcelain Cup and Saucer and a Modern Version of a Delicate Dessert
Lucy Waverman sets and serves student chef Esther Tabert’s Chamomile Panna Cotta in her (Waverman’s) grandmother’s Royal Nippon porcelain cup and saucer. Bringing together grandmother’s china and Tabert’s recipe, in turn, captures the essence of Tabert’s Chamomile Panna Cotta: a remake of a simple traditional recipe that Esther says was inspired by “her mother’s love of chamomile tea.” Using antiques in new ways is an inventive way to use family heirlooms while illuminating our link to the past.
